Crawfish Á La

I don't think that there is a substitute for crawfish tails, but just in case you cannot find the crawfish tails you can substitute shrimp. Use fresh shrimp not already cooked shrimp.

For 4 people ()


  • 1 pound(s) crawfish tails, washed and dried
  • 1.5 sticks of butter
  • 1 bunch green onions, chopped
  • 0.5 cup(s) parsley, chopped
  • 3 tablespoon(s) flour
  • 1 pint(s) half and half
  • salt and red pepper to taste
  • 3 tablespoon(s) sherry

Crawfish Á La Directions

  1. Sauté crawfish in 1/2 stick of butter.
  2. In another skillet, sauté green onions and parsley in 1 stick butter. Blend in flour. Slowly add Half and Half, salt, and red pepper. 
  3. Add crawfish and sherry.
  4. Serve in chafing dish with toast rounds or over rice.
