Delicious Cranberry Applesauce Muffins

For those on a sugar-free diet this is a perfect chance to experiment using Splenda.

For 12 people ()


  • 1.25 cup(s) unsweetened applesauce
  • 2 tablespoon(s) vegetable oil
  • 2 eggs, beaten
  • 2 cup(s) cake flower
  • 0.25 cup(s) Splenda, granulated
  • 1.5 teaspoon(s) baking soda
  • 1 teaspoon(s) ground cinnamon
  • 0.5 teaspoon(s) salt
  • 1 cup(s) fresh or frozen cranberries, chopped
  • 2 tablespoon(s) finely chopped pecans

Delicious Cranberry Applesauce Muffins Directions

  1. Preheat oven to 350 degrees.  Grease and flour a muffin pan or use paper liners.
  2. In a small bowl, mix together applesauce, oil and eggs.  
  3. In a large bowl, combine cake flour, Splenda, baking soda, cinnamon and salt.
  4. Make a well in the center, and pour in egg mixture.  Stir until just moistened (don’t over beat) then fold in cranberries.
  5. Spoon batter into muffin cups, 2/3 full.  Sprinkle nuts over top.
  6. Bake in preheat oven for 25 to 30 minutes or until toothpick comes out clean when inserted in center of muffin
  7. Cool in pan before removing.
