Cranberry Bread

I like this recipe.  It's easy to follow and easy to make.  If you don't have dried cranberries you could substitute them with dried strawberries.

  • 3 cup(s) flour
  • 0.25 teaspoon(s) baking powder
  • 2 teaspoon(s) baking soda
  • 3 teaspoon(s) cinnamon
  • 0.5 teaspoon(s) nutmeg (optional)
  • 3 eggs
  • 2 cup(s) sugar
  • 1 cup(s) oil
  • 2 teaspoon(s) vanilla
  • 0.25 cup(s) orange juice
  • 2 cup(s) cranberries
  • 1 cup(s) walnuts or pecans

Cranberry Bread Directions

  1. Preheat oven to 350 degrees.
  2. Sift dry ingredients in a bowl (flour, baking powder, baking soda, cinnamon and nutmeg).
  3. Beat eggs.
  4. Add sugar, oil, vanila and orange juice.  Blend well.
  5. Stir in cranberries.
  6. Add dry ingredients and nuts.
  7. Pour into 2 well greased bread pans or 5 mini loaf pans.
  8. Bake at 350 degrees or 45 to 60 minutes.
