Chicken Marinade

When marinating the chicken in this particular marinade if you're doing the the chicken breast I would not use boneless and skinless I would use the entire whole chicken breast with the bone and with the skin on it because using lime juice, lemon juice and vinegar would break down the meat too much. If you substitute chicken thigh meat instead of the breast follow this recipe the way it's printed.

  • 0.25 cup(s) cider vinegar
  • 3 tablespoon(s) prepared coarse-ground mustard
  • 3 cloves garlic, peeled and minced
  • 1 lime, juiced
  • 0.5 lemon, juiced
  • 0.5 cup(s) brown sugar
  • 1.5 teaspoon(s) salt
  • 6 tablespoon(s) olive oil
  • ground black pepper to taste
  • 6 boneless, skinless chicken breast halves

Chicken Marinade Directions

  1. In a large, nonreactive container, thoroughly mix cider vinegar, whole grain mustard, garlic, lime juice, lemon juice, brown sugar, and salt.Whisk in olive oil and pepper.
  2. Place chicken in the mixture. Cover, and marinate chicken in the refrigerator 8 hours, or overnight.
  3. Preheat an outdoor grill for high heat, and lightly oil grate. Place chicken on the prepared grill, and cook 10 minutes per side, until no longer pink and juices run clear. 
  4. Discard remaining marinade.
