Beef Chili

For anyone who is on a fat free diet I would not recommend this beef chili recipe, although it's really good when it is made.

For 8 people ()


  • 4 ancho chiles, seeds and stems removed, chopped fine
  • 2 pound(s) beef, cut into 1/2 inch cubes
  • 1 pound(s) pork, cut into 1/2 inch cubes
  • 0.25 cup(s) suet
  • 0.25 cup(s) pork fat
  • 3 medium onions, chopped
  • 6 cloves garlic, minced
  • 6 dried red New Mexico chiles, seeds and stems removed
  • 1 tablespoon(s) cumin seeds, freshly ground
  • 2 tablespoon(s) Mexican oregano
  • salt, to taste

Beef Chili Directions

  1. Lightly flour the beef and pork cubes. Quickly cook in the suet and pork fat, stirring often.
  2. Add onions and garlic and sauté until they are tender and limp.
  3. Remove all pieces of fat. Add the water to the mixture and simmer for 1 hour.
  4. Grind the chiles in a blender or molcajete.
  5. Add to the meat mixture. Add remaining ingredients and simmer for an additional 2 hours.
  6. Skim off any fat that rises, then serve.
