Chili Enchiladas

Ground chicken are ground turkey can be substituted for the ground beef. This is a gluten-free recipe, but I would check your enchilada sauce to make sure that there is no flour in the sauce.

Recipe

  • 12 corn tortillas
  • 1 pound(s) ground meat (preferably beef)
  • 0.5 teaspoon(s) salt
  • dash black pepper
  • 0.5 pound(s) (or more) grated cheddar cheese, sharp
  • 1 medium onion, chopped
  • 1 large can chili, without beans
  • 0.5 teaspoon(s) red pepper
  • 1 can(s) enchilada sauce

Chili Enchiladas Directions

  1. In a skillet on top the stove, saute the ground meat with half the onion. Add the chili, salt and peppers and simmer for ten minutes, covered.
  2. Fry the tortillas slightly in oil, drain. Fill with  meat, onion and cheese; roll. Place in baking dish.
  3. Spoon remammg meat over tortillas, top with cheese and onion and the can of enchilada sauce. Bake 15-20 minutes. Serve right away.
