Cranberry Salad

During the holidays, Thanksgiving and Christmas, fresh cranberries are always available. Take advantage of the fresh crop.

For 7 people ()


  • 2 oranges
  • 2.5 cup(s) fresh cranberries
  • 1 box (6 ounce) orange flavored gelatin
  • 3 cup(s) boiling water
  • 2 tablespoon(s) lemon juice
  • 1 cup(s) sugar
  • 1 pinch(es) salt
  • 1.5 cup(s) finely chopped celery
  • 1 cup(s) crushed pineapple, drained
  • 0.5 cup(s) pecans, chopped

Cranberry Salad Directions

  1. Peel orange; put peelings and cranberries through a food grinder, or use a food processor to chop finely. 
  2. Dissolve gelatin in boiling water. Add lemon juice, sugar and salt. Stir untiJ sugar is dissolved.
  3. Add cranberry mixture, celery, pineapple and pecans. Mix well. 
  4. Pour into large (10-12 cup) mold, or a large Pyrex casserole.
  5. Let set in refrigerator. Best if made at least 2 days ahead to enhance flavor.
