Almandine Rice

When I prepared this dish, I only had access to roasted, salted almonds. I was very satisfied with the finished dish.

  • 2 cup(s) wild rice
  • 0.75 cup(s) almonds, chopped lengthwise
  • 0.5 cup(s) olive oil
  • 0.25 cup(s) onion, chopped
  • 0.25 cup(s) chives, chopped
  • 0.25 cup(s) green onions, chopped
  • 0.25 cup(s) green pepper, chopped
  • 4.5 cup(s) chicken stock
  • salt and fresh ground pepper to taste

Almandine Rice Directions

  1. Wash rice several times to remove starch. Soak in cold water for 1 hour. Drain rice. 
  2. Preheat oven to 325F. Saute onion, chives, green onion and green pepper until tender. Add rice and cook, while stirring, over low heat until rice begins to turn clear.
  3. Add stock, salt and pepper. Mix in almonds. Bake for 1 1/2 hours, stirring occasionally, or until rice is cooked and liquid is absorbed.
