Cordon Bleu Cabbage

This is an extremely beautyful way to prepare a whole head of cabbage.  Not only is it delicious but the presentation is beautiful.

  • 1 large head cabbage


  • 2 cup(s) cooked ground ham
  • 1 cup(s) bread crumbs
  • 0.75 cup(s) hard cheese, grated
  • 0.5 teaspoon(s) dry mustard
  • 0.25 teaspoon(s) paprika
  • 1 dash(es) cayenne
  • salt to taste


  • 3 tablespoon(s) butter
  • 3 tablespoon(s) flour
  • 1.5 cup(s) milk
  • 1 cup(s) cheese, grated
  • 0.25 teaspoon(s) salt
  • 0.25 teaspoon(s) paprika
  • 0.5 teaspoon(s) dry mustard
  • 1 dash(es) cayenne pepper

Cordon Bleu Cabbage Directions

  1. Trim loose outer leaves from cabbage. Cut out stem and enough cabbage to make a deep well. 
  2. Filling: Mix all ingredients in mixing bowl. Fill center of cabbage with filling. Steam for 1 hour or until tender, making sure pot does not boil dry. Wrap cabbage in heavy foil and bake at 325F for 2 hours. 
  3. Cheese Sauce: Melt butter in saucepan. Stir in flour and blend. Slowly stir in milk and bring almost to a boil. When sauce is smooth and hot, reduce heat and stir in cheese and seasonings. Stir until smooth. 
  4. To serve: cut cabbage into four servings (eight, if this is for lunch). Pour cheese sauce over cabbage, dust with paprika for color.
