Rockerfeller Sauce

This is a great sauce but I would prefer my Pernod over ice.

Recipe

  • 3 (10 ounce) bags fresh spinach
  • 1 bunch(es) green onion
  • leaves from 1/2 " of celery
  • 1 bunch(es) fresh parsley
  • 4 cup(s) water
  • 1 cup(s) grated Parmesan cheese
  • 1 cup(s) breadcrumbs
  • 1 pound(s) butter, melted
  • 1 jigger Pernod (anise liqueuer)

Rockerfeller Sauce Directions

  1. In a large pot, boil spinach, onions, onion leaves, garlic, and parsley in water for 20 minutes.
  2. Drain and chop in food processor.  
  3. Return to pot and add cheese, bred crumbs, and melted butter.  Mix.
  4. Add Pernod and stir.  Serve over oysters.
