  • 0.25 pound(s) Kosher salami, cubed
  • 1 sprig thyme
  • 1 onion, sliced
  • 2 cup(s) tomatoes
  • 1 cup(s) uncooked long grain rice
  • 1 tablespoon(s) flour
  • 0.25 cup(s) green pepper, minced
  • 1 sprig parsley, minced
  • 1 clove garlic, minced
  • 1 pound(s) Kosher smoked sausage
  • 1.25 cup(s) tomato juice
  • salt and pepper

Bayou Boeuf Jambalaya Directions

  1. Melt shortening in heavy saucepan over medium heat.
  2. Stir in flour, salami, and green pepper. Simmer 5 min, stirring constantly.
  3. Add remaining ingredients except rice. Bring to boil.
  4. Add rice to liquid. Cover and simmer for 40 min. until all liquid is absorbed.
