Cajun Style Pasta

This is an excellent dish for a large group of people, you can double it are you can triple it, but when you do so make sure that you test the taste for salt in the black pepper don't double or triple that just add enough to taste.

For 4 people ()


  • 10 (or more) medium sized shrimp, peeled and deveined
  • 12 ounce(s) linguini
  • 1 teaspoon(s) butter or olive oil
  • 2 garlic cloves, minced
  • 0.5 pound(s) chicken breast meat, diced
  • 2.5 tablespoon(s) all-purpose flour
  • 2 cup(s) 1% milk
  • 2 tablespoon(s) sherry
  • 0.25 cup(s) grated Parmesan cheese
  • 0.25 teaspoon(s) cayenne
  • 4 plump tomatoes, seeded and chopped
  • 0.5 cup(s) frozen peas
  • salt and black pepper to taste

Cajun Style Pasta Directions

  1. Prepare the linguine according to package directions.  Drain and keep warm until ready to serve.
  2. Melt the butter in the center of a large non-stick skillet over medium-high heat. Add the garlic and cook for 1 minute.
  3. Add the shrimp and chicken. Pan-fry until the chicken is cooked through, 3-4 minutes.
  4. Whisk the flour, milk, sherry, and Parmesan cheese together. Pour into the skillet and bring to a boil while stirring. Reduce heat to medium and continue to cook for about 5 minutes until the mixture has thickened, stirring occasionally.
  5. Add the cayenne and fold in the tomatoes and peas. Cook until heated through. Season to taste with salt and pepper.
  6. Arrange the linguine on individual plates and spoon the sauce over the top.  Garnish with chopped fresh parsley.
