Pork Jambalaya With Burnt Sugar

Substitute chunks of pork for the pork ribs. Buy a pork roast and cut it into medium-size chunks. You could also use chunks of pork loin.

  • 3 pound(s) pork ribs, cut into pieces
  • 0.5 cup(s) onion, chopped
  • 1 teaspoon(s) sugar
  • 1 cup(s) raw rice
  • 3 cup(s) water
  • 0.25 cup(s) bell pepper, chopped
  • oil
  • onion tops and parsley (optional)
  • salt

Pork Jambalaya With Burnt Sugar Directions

  1. Select a thick black iron pot. Put in enough oil to cover the bottom. Heat until hot.
  2. Stir in sugar and brown. Season ribs and brown in hot oil.
  3. Saute the onion and bell pepper until wilted.
  4. Add raw rice to pot along with the water. Cover and cook slowly until done.
  5. Add onion tops and parsley and cook for 15 minutes longer. If mixture cooks down too much, add a little more water.
  6. The sugar cuts the onion flavor and gives the dish a distinct flavor.
