  • 3 pound(s) pork ribs
  • 1 cup(s) rice, raw
  • 3 cup(s) water
  • bell pepper
  • red pepper
  • onion
  • onion tops and parsley
  • salt

Jambalaya De Rein Couchon Directions

  1. Salt pork ribs and pepper to taste.
  2. Place in iron pot and brown thoroughly.
  3. Pour off excess fat. Chop about one-half cup onion, one-fourth cup bell pepper and a piece of garlic. Add to ribs and saute only until wilted.
  4. Wash raw rice and salt to taste. Add to pot along with the water.
  5. Cover and cook very slowly over low flame until done. Add chopped onion tops and parsley about 15 minutes before serving.
