Fresh corn in season is much more flavorful than canned.


Take advantage of farmers market buys during fresh vegetable and fruit season.


In a bind use the canned. Fresh is best.

  • 3 strips bacon
  • 0.5 cup(s) chopped green pepper
  • 4 fresh whole tomatoes
  • 0.5 chopped onions
  • 2 cans whole kernel corn (16 oz)
  • 1 teaspoon(s) sugar

Corn in a Skillet Directions

  1. Fry bacon until crisp.  Remove bacon from pan and drain on paper towel.  
  2. Place chopped green pepper, tomatoes, chopped onions into the bacon drippings which were left in the pan, cook slowly until onion is transparent.  
  3. Drain corn and mix corn in pan with other ingredients.  
  4. Break bacon into small pieces and sprinkle in pan over all ingredients.  
  5. Simmer while covered about 20 to 25 minutes.
