Bearnaise Sauce

Béarnaise sauce is a sauce made of clarified butter emulsified in egg yolks and white wine vinegar and flavored with herbs.

  • 4 egg yolks
  • juice of one lemon
  • 2 cup(s) melted butter
  • 0.25 cup(s) chopped parsley
  • 1 tablespoon(s) tarragon vinegar
  • salt and pepper

Bearnaise Sauce Directions

  1. To make sauce, put egg yolks and lemon juice in top of double boiler and cook over low heat, never allowing water in bottom to boil. 
  2. Slowly add melted butter, stirring constantly with a wooden spoon or wire whisk.
  3. Add salt, pepper, parsley and vinegar.
  4. Makes 2 cups.
