  • 0.25 cup(s) butter
  • 1 bunch green onions, chopped
  • 1 tablespoon(s) lemon juice
  • 2 tablespoon(s) flour
  • 2 dozen oysters
  • 3 cup(s) oyster liquid or oyster liquid an milk
  • 2 cup(s) (7 3/4 ounce) cans artichoke bottoms, one can drained and sliced, the other drained only
  • salt and pepper to taste
  • Parmesan cheese

Artichoke-Oysters Bienvenue Directions

  1. Sauté onions in butter until transparent. 
  2. Add lemon juice and stir in flour. Add oysters and liquid, artichoke slices, salt and pepper to taste. Simmer for 10 minutes; sauce will thicken. 
  3. Spoon mixture into hole artichoke bottoms, sprinkle with Parmesan cheese and run under the broiler for 2 to 3 minutes. Top with heavy serving of Bearnaise sauce. (If made the day before, bake in oven for 20 minutes at 300°F at serving time, or reheat in microwave for 5 minutes). Then top with sauce.
