Black Bird Jambalaya

Never had black bird jambalaya but  looking forward to trying it.

  • 30 black birds
  • 0.5 cup(s) chopped onion tops and parsley
  • salt, black and red pepper to taste
  • cooking oil
  • 6 cup(s) raw rice
  • 6 cup(s) water

Black Bird Jambalaya Directions

  1. Prepare black birds for cooking. Heat oil in thick pot. Brown a few birds at the time in the hot oil until browned nicely on all sides. Remove these and brown another bunch until all have been browned.
  2. Wilt the green onion and parsley in the hot grease. Put birds back into pot. Add the raw rice and water and seasoning. Cook over medium heat until mixture starts to boil.
  3. Lower fire and stir every now and then until all the liquid has been absorbed and rice and birds are tender. Cover and simmer for ten minutes.
