Cream Cheese Cupcakes

I don't quite know why certain recipes call for ingredients to be used at room temperature. But the end results of each of the recipes turn out beautifully.

  • 3 8 oz. pkgs. cream cheese
  • 5 eggs
  • 1 cup(s) sugar
  • 1.5 teaspoon(s) vanilla


  • 0.5 pint(s) sour cream
  • 0.25 teaspoon(s) vanilla
  • 0.5 cup(s) sugar
  • 1 can cherry or strawberry pie filling

Cream Cheese Cupcakes Directions

  1. Have cheese and eggs at room temperature. Blend cream cheese thoroughly and add eggs one at a time. Gradually add sugar and vanilla.
  2. Fill cupcakes to 1/4 inch of top. Bake at 300 degrees until top cracks (40 minutes). Remove from oven and cool 5 minutes.
  3. Topping:  Mix sour cream, vanilla and sugar. Spread on top of cupcakes and bake 5 minutes at 300 degrees. Top with pie filling and refrigerate.
