Barbecue Beef Roast

For those busy home cooks this is a great way to prepare your beef roasts because of the  long cooking time. This means you don't have to be hanging over the stove stirring a pot.

For 8 people ()


  • 4 pound(s) round (7-bone chuck roast), cut 2" thick
  • 2 stalks celery, diced
  • 2 teaspoon(s) meat tenderizer
  • 3 green onions, chopped
  • 1 garlic clove
  • 0.25 green pepper, diced
  • 0.5 teaspoon(s) oregano
  • 0.5 teaspoon(s) rosemary
  • 1 dash(es) cayenne
  • 1 tablespoon(s) Worcestershire sauce
  • 0.75 cup(s) Burgundy wine (beer is also an option if wine is not your favorite)
  • 3 tablespoon(s) peanut oil

Barbecue Beef Roast Directions

  1. Slash fat edges. Sprinkle both sides of roast evenly with meat rub.
  2. Pierce meat deeply all over with fork.
  3. Place in shallow dish and top with green onions, garlic, green pepper, celery, oregano, rosemary and cayenne.
  4. Combine Worcestershire, burgundy and oil and pour over meat. Refrigerate overnight, turning meat several times, each time spooning the chopped ingredients over top again.
  5. Sear both sides over glowing coals. Raise grill and continue cooking,
  6. having meat about six inches from heat, until done as desired.
  7. Allow from 50 to 60 minues for total cooking time. Brush frequently during cooking with any remaining marinade.
