Banana Pudding

When making this banana pudding do not substitute banana extract for the whole bananas. The whole bananas are what gives it the texture, the consistency and the taste that is unbeatable.

For 8 people ()


  • 4 whole eggs, separated
  • 0.67 cup(s) sugar
  • 0.13 teaspoon(s) salt
  • 2 tablespoon(s) cornstarch
  • 3 cup(s) milk
  • 1 teaspoon(s) vanilla extract
  • 2 bananas, sliced
  • vanilla wafer cookies

Banana Pudding Directions

  1. Beat 4 eggs yolks slightly. Add sugar, salt and cornstarch.
  2. Add mixture to milk. Place in saucepan and cook, stirring constantly, until thickened. Add vanilla extract.
  3. Layer vanilla wafers and bananas in 8 inch square baking dish. Stand vanilla wafers up around sides of dish.
  4. Pour pudding over vanilla wafers and bananas.
  5. Make meringue by beating egg whites until frothy and add 5 tablespoons granulated sugar.
  6. Beat until stiff and add vanilla extract.
  7. Spread on top of pudding and bake in slow oven 300 F for 20 minutes or until golden brown on tips.
