Apple Shortbread Pie

Providing you don't have golden delicious apples, I would substitute any other apple that has the soft texture that Golden delicious apples have.

For 8 people ()


  • 2 cup(s) all-purpose flour
  • 0.5 teaspoon(s) ground cinnamon
  • 1.25 pound(s) Golden Delicious apples, peeled, cored and cut into 1/4" slices
  • 0.5 cup(s) white sugar
  • 0.25 teaspoon(s) salt
  • 0.75 cup(s) chilled butter, diced
  • 2 egg yolks, beaten
  • 0.25 cup(s) light brown sugar, packed
  • 1 tablespoon(s) all-purpose flour
  • 0.5 teaspoon(s) ground nutmeg

Apple Shortbread Pie Directions

  1. Preheat oven to 400 F.
  2. Sift four, 1/2 cup sugar and salt into a large bowl.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Fold in egg yolks (mixture will be crumbly).
  5. Remove 1/4 of mixture, and set aside. Press remainder onto bottom and sides an 8 inch tart shell or pie pan.
  6. In a large bowl, combine apples, brown sugar, 1 tablespoon flour, cinnamon and nutmeg.
  7. Place apples into crust, and sprinkle reserved crumb mixture evenly over top.
  8. Place pie on a baking sheet, and bake in preheated oven for 15 minutes.
  9. Reduce heat to 350 F and continue baking 20 minutes, or until top is golden brown and filling is bubbling.
